It’s National Bisque Month! To celebrate this wonderful time of year, we’re profiling the best heart-warming soups and chowders recipes from the Sitka Seafood Market's test kitchen. Try one this week!
1. Old Bay White Fish Chowder
This super satisfying, all-in-one, one-pot chowder combines meaty white fish, hearty potatoes, and baby spinach, flavored with Old Bay Seafood seasoning blend and comes together pretty quickly.
2. Shrimp Tortilla Soup
This light but hearty soup gets plenty of flavor from poblano chiles and homemade shrimp stock. Finely chopped corn tortillas help thicken the soup as it simmers. Poblanos can vary in heat, so taste before adding and adjust to suit your preferences. Having a sweet bell pepper on hand as a heat-free substitute is a kid-friendly dinner time strategy
3. Hearty Basque Tuna and Potato Soup
This Spanish Basque Country soup, called marmitako, combines albacore tuna, potatoes, sweet bell peppers, and lots of fruity olive oil. It is comfort in a bowl. Serve with a dollop of Romesco sauce for added richness and authenticity
4. Italian Seafood Stew (Cioppino )
Cioppino is an Italian tomato-based seafood stew, loaded with big hunks of fish and shellfish. We’ve included a mix of white fish for body and spot shrimp for sweetness and depth of flavor. Often served on Christmas Eve as part of the Feast of the Seven Fishes, you can enjoy it all year round with plenty of crusty bread and a drizzle of fruity olive oil.
5. Creamy Chipotle Fish Chowder
Bacon and chipotle chiles double up the smokiness in this satisfying, warming chowder. Hominy, a key ingredient pozole, adds a tortilla chip-like flavor and a satisfying chew. If you can’t find it at your local grocery store, fresh or frozen corn is a fine substitute. Or, you could double up on the tortilla chips for garnish!
