Mama’s Rockfish Bake

She is happy to pass on recipes as well, this one for a simply prepared rockfish. It can be prepared quickly after a long day at the office, or even a long day on the boat!

Ingredients

  • 1 pound rockfish Available in Our Seafood Subscription Box

  • 1 tablespoon dill, chopped

  • ⅓ cup sour cream

  • ⅓ cup mayo

  • ¼ cup parmesan cheese, grated

  • 1 tablespoon pickle juice

  • 1 bunch broccolini

  • 1 tablespoon olive oil

  • 2 cloves garlic, sliced

  • Salt and pepper, to taste

Directions

PREPARE ROCKFISH

Preheat oven to 350°.

Sprinkle the rockfish fillets with salt, pepper, and dill on both sides.

PREPARE SAUCE

Mix the sour cream, mayo, parmesan cheese, and pickle juice together.

BAKE ROCKFISH

Place fish in a baking dish and spread mayo mixture on top.

Bake 20-25 minutes until rockfish is cooked through and the top is a little browned.

BROWN GARLIC

In a large sauté pan, heat olive oil over medium heat while the rockfish is baking. Sauté garlic slices until golden brown, about 2-3 minutes. Remove garlic slices from pan.

SAUTÉ BROCCOLINI

Add broccolini to the pan and sauté 3-4 minutes until bright green. Add 2 tablespoons water and cook until broccolini is cooked through and water is evaporated. Season with salt & pepper.

PLATE

Sprinkle garlic slices over the broccolini and serve alongside the rockfish
