Onion Parmesan Crusted Salmon

This recipe works with all types of salmon, adjust cooking time accordingly. Recipe from author Silvia Ribas' blog 'Garden in the Kitchen'.

PREP

Preheat oven to 400 °F degrees. Line a large sheet pan with parchment paper and set aside.

MAKE CRUST

In a skillet, toast panko and crispy onions until they start to brown (3-4 minutes). Remove from heat and stir in Parmesan cheese.

COOK FISH

Drizzle olive oil over salmon. Top with toasted onion and Parmesan crust. Squeeze fresh lemon juice from half of the lemon over fish and top with lemon slices (optional).

Bake for 12-15 minutes. Remove from oven, garnish with fresh herbs and serve.
