Captain John Skeele of the F/V Sunfish explains, “I like to fry my halibut and complain when my son, wife, and daughter all tell me to bake it! Sometimes to head off this family conflagration, I just go ahead and bake it, against my better judgment. This is one of our favorite recipes for baked halibut because it is so simple and tasty.”

Ingredients

  • 1 pound halibut 

  • ½ cup seeded Kalamata olives, halved

  • 1 lemon, thinly sliced

  • 2 sprigs rosemary

  • ¼ teaspoon paprika

  • 1 tablespoon extra virgin olive oil

  • Salt and pepper, to taste

Directions

PREHEAT OVEN

Heat oven to 450 degrees. Place halibut into baking dish.

PREP FISH

Drizzle fish with olive oil, sprinkle with salt, pepper, and paprika. Lay sprigs of rosemary and lemon over halibut. Top with Kalamata olives.

BAKE + BROIL

Bake for about 7 minutes. Then, turn broiler on high and finish under the broiler for about 5-7 minutes.

SERVE

Drizzle with a little more olive oil when it’s out of the oven. That’s it!

He invested in a cheap, old salmon troller and on his very first day out, lost nearly all of his gear.
