Product Description

  • Sidestriped shrimp are one of five different species of shrimp found in Alaska waters. The beautiful orange shells with white stripes running laterally along their sides are what gives the shrimp their name. They’re herbivores, which is what gives them their sweet taste — sweeter than that of spot shrimp. They’re also smaller than spot shrimp and have thinner shells, which are easy to peel off. In fact, the shells are thin enough that you could skip the peeling all together. Shrimp is ice-glazed, head off, shell on, and loose-packed in 8 ounce packages (~20 shrimp).


Cooking Tips

  • Sidestriped shrimp are sweet, fresh, and slightly briny, with a delicate yet firm buttery texture. Try them sautéed and served with pan sauces and pastas, or deep fried in their shells for a super crispy Chinese style treat.


Sourcing & Traceability

  • They’re harvested in a very small fishery in Southeast Alaska, where only ten fishermen participate. The fishermen use beam trawl gear, which skim a lightweight net along the ocean floor with rollers (rather than dragging a weighted net with heavy doors, like the notorious “bottom trawl” gear). The beam trawls are used exclusively in sandy, muddy habitats, such as around the mouths of rivers, where the ocean floor is already accustomed to frequent disruption. The fishermen also use a fish excluder, which creates an opening in the net for fish to pass through, thereby mitigating bycatch.
