Stovetop Salmon and Chorizo Paella
Traditional paella uses short grain bomba rice, sometimes labeled valencia, and is cooked uncovered over an open fire. This simple one-pot version, using whatever rice you have on hand, is covered with a lid and cooked on the stove top, making it accessible year round.



Air Fryer Salmon
An air fryer is basically a convection oven, circulating hot air for faster, even cooking. If you don’t have one, no worries, just increase the oven temperature by 25°F. Mayonnaise keeps the salmon incredibly moist during cooking and the mustard and horseradish add a hint of spice.
