Sheet pan suppers are a busy cook’s best friend. Everything roasts together on a single pan, making kitchen prep and cleanup super easy! Be sure to use a sturdy, rimmed baking sheet for even cooking.

Baking salmon at a low temperature allows the fat to melt slowly, gently basting the fish from the inside out to keep it especially moist. The roasted lemon slices add a delightful tartness to the carrots and are entirely edible if you choose. Just be sure to toss them with the carrots before serving — you’ll be glad you did!

Sweet, sticky, and a little spicy, salmon and honey are a match made in heaven. Toss in a little ginger and garlic and this simple dish is so much greater than the sum of its parts. A microplane makes quick work of grating the ginger and garlic.

Mediterranean flavors run deep in this simple one-pan supper. Potatoes and tender white fish fillets are roasted and drizzled with lemon juice, oregano, olives, feta, and mint. Throw in a handful of baby spinach for good measure (not to mention iron, calcium, and oh, deliciousness), and dinner is served.
