Honey Roasted Salmon with Delicata Squash and Feta

Whether you find them at the farmers’ market or supermarket, delicata squash are tender and sweet and the epitome of autumn. As an added bonus, the skin is “delicate” enough to eat, so no need to peel. Just be sure to remove the seeds.

Herb-Broiled Fish with Charred Lemon Rouille

The lemon sauce — rouille — adds a citrusy touch to this herb-broiled fish dish. Rich, buttery sablefish are sweet and nutty but any rich and fatty fish, especially black sea bass and salmon would be equally delicious.

Salmon Donburi Bowl

We’ve taken a favorite Japanese staple, unadon (eel rice bowl), and given it a few little twists. The kale salad is not traditional, but it is pretty tasty! And salmon stands in for the eel. Keep in mind that keta, coho, and sockeye (not king) are much leaner than eel and can dry out if broiled until the glaze is darkly caramelized.

Newfoundland Potato and Fish Gratin

Bubbling hot out of the oven, tender white fish and sliced potatoes are blanketed in a cheesy white sauce flavored with dried herbs and lemon zest, then topped with buttery crumbs and baked until golden. This is comfort food at its most comforting. Preheat the oven, build a cozy fire, and tuck into this traditional east coast Canadian dish.
