Peak Season: Year-Round
These rockfish are harvested primarily by a small-boat jig fleet in Kodiak that we have developed partnerships with to create higher value markets for this underutilized fish. Smaller amounts are caught in Southeast Alaska from our troll and longline fleet. Mild, sweet flavor, firm texture, and small delicate flakes make rockfish ideal to be pan-seared, broiled, breaded and fried, and simmered in soups, stews, chowders, and curries. But we think it makes a perfectly delightful ceviche with little more than a healthy squeeze of lime, sliced hot chiles and onions, and chopped cilantro.
