Sidestriped shrimp are sweet, fresh, and slightly briny, with a delicate yet firm, buttery texture. They’re herbivores, which is what gives them their sweet taste — sweeter than spot shrimp. They’re also smaller than spot shrimp and have thinner shells, which are easy to peel off. Shrimp is ice-glazed, head off, shell on, and loose-packed in 8 ounce packages with ~20 shrimp per half pound.
