Yelloweye Rockfish

Peak Season: February

Yelloweye are the showstoppers of the rockfish family — bright orange-red, wide-eyed, and a longtime favorite among Alaskans. These slow-growing fish live among the rocky reefs of Southeast Alaska, and they are caught in a directed rockfish fishery using longline gear. Yelloweye has a clean, mild, slightly sweet flavor and a firmer texture with larger flakes than other rockfish, so it holds up beautifully on the grill or in a hot pan. Portions are skinless and boneless. Try it pan-seared with brown butter and capers, tucked into fish tacos with a bright cabbage slaw, or steamed with ginger, scallions, and a splash of soy.
