Halibut cheeks are a favorite cut for many halibut lovers. They are literally the cheeks of the fish, and shaped more like large scallops rather than fillets. Since there are only 2 per fish, this cut rarely makes it anywhere but the Captain's kitchen. The firm but tender texture and buttery-sweet taste resembles scallops, but they have pronounced striations that shred more than they flake, similar to crab. Portions are frozen and vacuum-sealed into 8 oz bags with 1 to 4 halibut cheeks per bag (but typically 2 to 3).

Try them seared with a bright, lemony pan sauce, or grilled with a summery salsa. Cook until firm but not hard. A light dusting of flour keeps them from sticking to the pan. They’re also delicious simmered in a creamy herb broth, or battered and fried for fish and chips.
