California Rockfish Bundle

With a mild, sweet flavor and firm, flaky texture, California rockfish takes well to just about any preparation. Pan-sear it and finish with a squeeze of citrus, or bread and fry it for fish tacos with all the fixings. It holds up beautifully on the grill in a foil packet with vegetables, or poached gently in a light broth. 

Because of the way this California rockfish is cut, you may notice more of the dark, richer-flavored strip of fat running down the center of the fillet. For the cleanest bite, trim this away before cooking — a quick step chefs use on any richer-flavored fish, and one that takes just a few extra seconds with a paring knife.
