Yelloweye rockfish is sweet, mild, and almost nutty, and its fillets are larger than other rockfish varieties. Yelloweye rockfish are special in part because they are less numerous and slower growing than other rockfish types. Because of this, there isn’t actually a fishery to harvest yelloweye rockfish; instead, they are caught as highly-regulated incidental catch in the halibut and sablefish (black cod) longline fisheries.
