What happens when you give a fisherman a surprise recipe? A little magic we like to call Boat Deck Cookin'! Here's an early one, back before the series had its proper title.

RECIPE

INGREDIENTS

  • ½ orange, zested and juiced
  • 2 scallions, thinly sliced
  • 2 garlic cloves, minced
  • 1-inch piece of fresh ginger, grated
  • 1 tablespoon mirin
  • 2 tablespoons tamari
  • ⅓ cup yellow miso
  • 1-pound sockeye fillet
  • 2 tablespoons coconut oil

DIRECTIONS

In a large bowl, combine orange zest, juice, scallions, garlic, ginger, mirin, tamari, and miso. Marinate sockeye in the miso mixture for at least 30 minutes or overnight.


In a medium, preferably nonstick pan, over medium-high heat, melt the coconut oil. Sear the salmon, skin-side down, until the sockeye is about ⅓ of the way cooked, approximately 2 to 3 minutes. Flip, cooking for an additional 2 to 3 minutes until the salmon is flaking. Serve immediately.
