In this episode of Know Your Fish, Culinary Director Grace Parisi discusses wild-caught Pacific cod. The Pacific cod fishery is so well managed and healthy that it is available all year long. It is a hearty whitefish that retains a lot of moisture and, as a result, may stick to the pan if you don’t have a good non-stick skillet. In this episode, Grace offers some tips to try to avoid that, and suggests a few of her favorite recipes for Pacific cod.

After you watch the video, check out these recipes that highlight the preparation methods Grace mentioned.

New England Fish Chowder

Pan-fried Cod with Homemade Chili Crisp

Pan-Seared Cod with Lemon-Caper Pan Sauce

Panang Fish Curry

Beer Battered Sandwich

Crispy Fish Cakes with Lemon Aoili

Fish Fingers
